The global functional mushroom market was valued at USD 34.62 billion in 2025 and is forecast to reach roughly USD 84.78 billion by 2035, a CAGR of 9.37 percent. The cognitive end of the category is growing faster still: the lion's mane and functional mushroom extracts market alone is worth USD 1.5 billion in 2026 and is projected to hit USD 5.6 billion by 2036, a 14 percent CAGR.
Drinks are where the trend is most visible. The Grocer was calling the functional mushroom "ready to boom" as early as 2024, and Tastewise tracks mushroom coffee as one of 2026's defining beverage stories. Functional coffee, the umbrella that mushroom blends sit under, is one of the defining coffee trends of 2026, growing at around 17% a year, with the broader category worth around USD 4.5 billion and forecast to reach USD 7.78 billion by 2030. This isn't a health shop niche any more: Black Sheep Coffee now serves a lion's mane mushroom coffee, a mainstream chain putting fungi on the menu.
Culinary vs Functional Mushrooms
The mushroom extract trend is about medicinal mushrooms: lion's mane, reishi, cordyceps and chaga, marketed for focus, calm or immunity. This sits largely in supplements, powders and functional beverages, and it's where the boldest claims live. It's also where the regulatory care is greatest: health claims on these ingredients need authentic substantiation, and the functional beverages category is watched closely for exactly that reason.
The culinary mushroom trend is quieter but arguably the bigger commercial opportunity for mainstream manufacturers. This is where culinary mushrooms such as shiitake come in: umami depth in sauces and ready meals, meaty texture in plant based formats, savoury richness in broths and snacks.
